Summer weather has returned to Western New York! Time for having some sun tea on the patio and catching a a few rays.
Working to rescue and recoup the contents of my second book - lost due to a computer system crash. These lazy days of June will be filled with the clicking sounds of my keyboard... connected to an external hard drive - just to be sure. Lesson learned.
Try some lighter fare for these warmer days - Zucchini, Tomato, & Onion Mélange
1 medium onion - chopped
1 large zucchini - cut in chunks
3 plum tomatoes - coarsely chopped
Olive oil
Parmesan Cheese
Sauté the onion in the oil in a saucepan for about 4 minutes. Add the zucchini and tomatoes. Cover the pan, place on very low heat - let simmer gently for about 8 minutes.
No peeking! Mixture will cook to a crisp-tender state.
Sprinkle generously with Parmesan Cheese. Serve with crusty Italian bread and some red wine.
Delicious hot or cold.
